Pumpkin seed recipe

Here’s an extremely tasty recipe for pumpkin seeds. Very edible and delicious and very simple.


Boil the pumpkin seeds for 10 minutes in salted water. This will soften the husk and render it less tough.

Drain well and dry in a towel before tossing with enough olive oil to give them a sheen.

Spread out on a baking tray lined with baking paper if you wish with salt and spice if you like (cumin or smoked paprika are both fab).

Roast for 20-25 minutes until golden.

Done!!

The same can be done with butternut squash seeds but without the boiling. Both have a wonderful biscuity flavour and go well as an amuse bouche, with an aperitif.
